How’s it going everybody this is beat the bush today i’m gonna show you how to cook a boneless lobster hotpot you’re not gonna get this anywhere because it’s just i never seen this before the thing is this is a live lobster so i’m gonna try to kill it in the most humane way as possible which is just a stab a knife right through the head in the middle if you ever try
To debone the lobsters actually really difficult because the meat just sticks to the shell so the trick here is to actually blanch it for a few minutes and the meat will come right off the shelf so grab a pretty thick knife because you got to cut through the shell and the brain is right here once we cut through the brain it’s not gonna feel anything so we’re gonna
Do this really quick so make sure you have a really big pot of boiling water and then you got a dead lobster here stick it in okay it’s about two minutes and that’s enough to blanch it so we’re gonna do the tail first cut along here and you just kind of twist it off cut along the inside not the outside because this is the shell and it’s really hard to clap so just
Cut along the inside like this pull it open the meat comes off really nicely like this and then the shell we can put it back in the hot pot to generate more flavor we want to cut along the back just kind of like a shrimp and devine it right here so we don’t want to eat that you can go rinse this slice this into about quarter inch each you’ll notice most of this
Is still raw and that’s a good thing because we don’t want it cooked here’s a full tail so far and i’m going to use a cleaver to take out the meat in the claws remove the rubber bands you want to crack it open like so here’s one of the boneless claws now this lobsters 3.1 pounds and the claw meat here along with the tail is thirteen point four ounces which works
Out to be about twenty-seven percent claw and tail meat so we also have all the shells which is one pound six and a half ounces this is about half of the weight and so another 25% is missing and those are all water that just happened to leak out so here’s all the lobster here i put all the shells back into the soup to give it more flavor i’ve added some fish sauce
To it some sesame oil just to give it some flavor i separated the head over here because the tamale you can eat if you put it in there let it boil it would just kind of all evaporate so i’m gonna separate it out and eat this later so you take a piece put it in like this little thing and swirl it around about 15 seconds or so will do it you just want it to be just
